Ingredients
  • 2 Tbsp olive oil
  • 1 small onion, finely chopped
  • 400g beef mince
  • 2 Tbsp chopped oregano
  • 2 Tbsp worcestershire sauce
  • 2 Tbsp Tomato sauce, plus extra, to serve
  • 4 eggs
  • 4 woodfired bread rolls or hamburger buns, halved and toasted
  • beetroot slices, tomato slices, baby lettuce leaves, to serve.

Directions
  1. Heat half of oil in a frying pan on high. Cook onion for 3 minutes, until softened. Cool.
  2. In a bowl, combine cooked onion, mince, oregano and sauces. Season. Divide mixture into four portions and shape into patties.
  3. Wipe frying pan clean with paper towel. Return to heat with remaining oil. Cook patties for 3-4 minutes each side, until cooked thoroughly. Remove and fry eggs to your liking in same pan.
  4. To assemble burgers, place a fried egg on base of each roll, top with patty, a slice of each beetroot and tomato, extra tomato sauce and lettuce. Finish with tops of rolls; and serve.
