CHEF CAT'S TUNA SALAD This is my take on how a tuna salad should taste. I played around with tuna and ingredients I like until I came up with what I think is the perfect concoction. I perfected this in 1984.

Ingredients
  • 2 large cans albacore tuna
  • 2 eggs hard boiled and chopped fine
  • 2 stalks celery chopped fine
  • 1 small red onion chopped fine
  • 1 cup green grapes cut into small pieces
  • 1/2 cup chopped pecans
  • 1/2 cup homemade thousand island dressing
  • Homemade Thousand Island Dressing:
  • 2 tablespoons mayonnaise
  • 1 tablespoon chili sauce
  • 1 tablespoon French dressing
  • 1 teaspoon capers
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper

Directions
  1. Mix all salad ingredients in glass bowl.
  2. Chill for at least an hour before spreading on bread, stuffing into a tomato or spreading on crackers.
  3. For dressing combine all ingredients and mix until well blended.
  4. Refrigerate until ready to use.
