So easy to make, uses 3 bananas that might have gone to waste. Smells great while baking, tastes even better.

Ingredients
  • 1/2 cup shortening (she always used Crisco)
  • 1 cup sugar
  • 2 eggs
  • 3 large very ripe bananas
  • 1/4 pound chopped nut meats (optional)
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Directions
  1. Cream sugar and shortenning
  2. stir in eggs
  3. add bananas crush them with the spoon and mix
  4. add remaining ingredients and mix well
  5. batter will be soft, pour into loaf pan
  6. Bake @ 350 for 1 hour.
  7. Check for doneness: a toothpick will come out clean.
  8. Delicious!
