Beef And Red Cabbage Rolls With Curry Sauce Recipe
BEEF AND RED CABBAGE ROLLS WITH CURRY SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayden Estate in Caddo Mills, Texas in 1984.

Ingredients
  • 1/2 pound top sirloin trimmed of fat and sliced paper thin into 8 slices
  • 1 cup sweet and sour red cabbage
  • 1 tablespoon dark sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons granulated sugar
  • 2 tablespoons rice vinegar
  • Curry Sauce:
  • 2 tablespoons butter
  • 1-1/4 cups minced white onion
  • 1/2 cup peeled minced apples
  • 1 banana mashed
  • 3 tablespoons apricot preserves
  • 2 teaspoons curry powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup water
  • 1/2 teaspoon salt

Directions
  1. Lay beef slices on a flat surface then divide red cabbage evenly among the 8 slices of beef.
  2. Tightly roll the beef around the red cabbage and secure with a toothpick.
  3. Repeat with remaining cabbage and beef.
  4. Heat oil in skillet over medium high heat then add meat rolls seam side down and cook 1 minute.
  5. Turn rolls over and continue cooking until all sides are evenly browned.
  6. Reduce heat and add soy sauce, sugar, vinegar and horseradish then cook a few more minutes.
  7. Move meat rolls to a serving platter and drizzle any remaining juices over them.
  8. Melt butter in skillet over medium heat.
  9. Add onions, apples, banana, preserves and curry powder then season with cayenne.
  10. Add water and mix well then adjust seasoning with salt.
