Almond Shortbread Recipe
ALMOND SHORTBREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Rockwell Estate in Lancaster, Texas in 1988.

Ingredients
  • 7 ounce roll almond paste chilled and grated
  • 1 cup granulated sugar
  • 2 sticks butter at room temperature
  • 2 egg yolks
  • 2-1/2 cups flour
  • 1 teaspoon baking powder
  • Melted semisweet chocolate

Directions
  1. Preheat oven to 350 then butter a rectangular baking pan.
  2. Place grated almond paste, sugar and butter in a bowl then beat on low speed until incorporated.
  3. Mix on high until fluffy then add yolks and beat until mixture is light and sugar is dissolved.
  4. Reduce speed to low and add the flour and baking powder.
  5. Mix only until all the ingredients are incorporated then spoon batter into prepared pan.
  6. Press down gently so batter is the same level throughout.
  7. Using the back of a knife score very shallow lines into batter to mark the sizes you want.
  8. Bake 25 minutes or until the shortbread is a light golden color then cool pan on a wire rack.
  9. If desired drizzle thin lines of melted chocolate across the shortbread then cut along score lines.
  10. Store in airtight tins.
