How to make it

  • Preheat oven to 375 then butter and flour spring form cake pan.
  • Beat butter until it becomes pale and soft then pour in sugar and beat until light and creamy.
  • Stir in almonds and vanilla then add eggs one at one time beating thoroughly before adding next.
  • Fold in zest, juice, polenta, baking powder and salt then spoon into pan and bake 40 minutes.

    I'm assuming you are using dry polenta or cornmeal in this recipe, not prepared moist polenta?
