Sauteed Winter Greens with Bacon

- 3/4 pound kale, chard, collards or spinach, sliced into 1/2" ribbons shopping list
- 2 strips bacon, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1 cup water shopping list
- 1 tablespoon unsalted butter shopping list
- salt and freshly ground black pepper shopping list
How to make it
- In a large, lidded saute pan, heat the bacon over medium heat until beginning to crisp.
- Add the garlic and saute 30 seconds longer
- Add greens and cook, stirring frequently, until bright green and softened.
- Add water and simmer, partially covered until greens are tender and liquid has evaporated, 6 to 10 minutes.
- Season with salt and pepper to taste.
- Just before serving, stir in butter to coat.
