How to make it

  • Heat saute pan till hot, and I mean hot
  • add olive oil and immediately add dredged sole before oil smokes
  • Saute 2 minutes
  • Gently flip, saute until sole flakes maybe another minute
  • add whole butter, let melt a bit
  • add parsley, capers and adjust seasoning if needed
  • transfer to serving plates and pour sauce over fish.
