Saute Sole With Caper And Lemon Recipe
When you need a quick entree and have a good source of fresh fish try this recipe

Ingredients
  • 1 pound fresh sole dredged in seasoned flour (salt, pepper, garlic)
  • 3 Tablespoons olive oil
  • 1 Tablespoon chopped fresh parsley
  • 2 Tablespoon capers
  • 2 Tablespoons whole butter
  • 1/2 of a lemon

Directions
  1. Heat saute pan till hot, and I mean hot
  2. add olive oil and immediately add dredged sole before oil smokes
  3. Saute 2 minutes
  4. Gently flip, saute until sole flakes maybe another minute
  5. add whole butter, let melt a bit
  6. add parsley, capers and adjust seasoning if needed
  7. transfer to serving plates and pour sauce over fish.
