Saute Sole with caper and lemon

- 1 pound fresh sole dredged in seasoned flour (salt, pepper, garlic) shopping list
- 3 Tablespoons olive oil shopping list
- 1 Tablespoon chopped fresh parsley shopping list
- 2 Tablespoon capers shopping list
- 2 Tablespoons whole butter shopping list
- 1/2 of a lemon shopping list
How to make it
- Heat saute pan till hot, and I mean hot
- add olive oil and immediately add dredged sole before oil smokes
- Saute 2 minutes
- Gently flip, saute until sole flakes maybe another minute
- add whole butter, let melt a bit
- add parsley, capers and adjust seasoning if needed
- transfer to serving plates and pour sauce over fish.
