Three Cheese Chicken Bake Recipe
THREE CHEESE CHICKEN BAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 8 ounces lasagna noodles
  • 1/2 cup chopped white onion
  • 1/3 cup chopped green pepper
  • 3 tablespoons butter
  • 1 can cream of chicken soup
  • 6 ounces sliced mushrooms
  • 1/2 cup chopped pimento
  • 1/3 cup milk
  • 1/2 teaspoon dried basil
  • 1-1/2 cups cream style cottage cheese
  • 2 cups diced cooked chicken
  • 2 cups shredded American cheese
  • 1/2 cup grated parmesan cheese

Directions
  1. Drain mushrooms and pimentos then crush the dried basil.
  2. Cook noodles in boiling salted water then drain well.
  3. Cook onion and pepper in butter until tender.
  4. Stir in soup, mushrooms, pimento, milk and basil.
  5. Lay half the noodles in a rectangular baking dish.
  6. Top with half each of the sauce, cottage cheese, chicken and cheeses.
  7. Repeat layers except for the last 2 cheeses then bake at 350 for 45 minutes.
  8. Top with cheeses and bake 2 minutes more.
