Herbed Brown Rice And Chicken Recipe
HERBED BROWN RICE AND CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 4 skinless boneless chicken breast halves
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon freshly ground black pepper
  • 1 can chicken broth
  • 1/2 teaspoon dried thyme leaves crushed
  • 1-1/2 cups uncooked quick cooking brown rice
  • 1 cup frozen peas
  • 1/4 cup grated parmesan cheese

Directions
  1. In medium nonstick skillet over medium high heat cook chicken 10 minutes or until browned.
  2. Sprinkle with garlic powder and pepper then set chicken aside.
  3. Stir in broth and thyme then heat to a boil and stir in rice then reduce heat to low.
  4. Cover and cook 5 minutes then return chicken to pan and add peas.
  5. Cover and cook 5 minutes longer then remove chicken and stir cheese into rice mixture.
  6. Spoon rice out onto serving platter and top with chicken then serve immediately.
