Italian Fried Chicken Recipe
ITALIAN FRIED CHICKEN This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Jennet Estate in Allen, Texas in 1983.

Ingredients
  • 3 pounds chicken cut into serving pieces
  • 2 packets Italian salad dressing mix
  • 3 tablespoons flour
  • 2 teaspoons salt
  • 1/4 cup fresh lemon juice
  • 1 cup milk
  • 1-1/2 cups pancake mix
  • 1 teaspoon paprika
  • 1/2 teaspoon sage
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Combine salad dressing mix, flour, salt and lemon juice.
  2. Dip and coat chicken evenly with mixture then stack chicken pieces in a bowl.
  3. Cover and refrigerate several hours or overnight.
  4. Combine pancake mix, paprika, sage and pepper.
  5. Dip chicken in milk then in pancake coating and dust off excess.
  6. Lightly brown in skillet with 1/2" vegetable oil in it.
  7. Brown 4 minutes per side then remove and place in a single layer in shallow baking dish.
  8. Seal with foil then bake 1 hour at 350.
  9. Uncover and baste with milk then return uncovered for 30 minutes longer.
