Italian Fried Chicken

- 3 pounds chicken cut into serving pieces shopping list
- 2 packets Italian salad dressing mix shopping list
- 3 tablespoons flour shopping list
- 2 teaspoons salt shopping list
- 1/4 cup fresh lemon juice shopping list
- 1 cup milk shopping list
- 1-1/2 cups pancake mix shopping list
- 1 teaspoon paprika shopping list
- 1/2 teaspoon sage shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
How to make it
- Combine salad dressing mix, flour, salt and lemon juice.
- Dip and coat chicken evenly with mixture then stack chicken pieces in a bowl.
- Cover and refrigerate several hours or overnight.
- Combine pancake mix, paprika, sage and pepper.
- Dip chicken in milk then in pancake coating and dust off excess.
- Lightly brown in skillet with 1/2" vegetable oil in it.
- Brown 4 minutes per side then remove and place in a single layer in shallow baking dish.
- Seal with foil then bake 1 hour at 350.
- Uncover and baste with milk then return uncovered for 30 minutes longer.
