SCALLOPED RICE WITH CHEESE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999.

Ingredients
  • 3/4 cup uncooked white rice
  • 1/8 teaspoon freshly ground black pepper
  • 6 tablespoons butter
  • 1/8 teaspoon paprika
  • 4 tablespoons flour
  • 2 cups milk
  • 3/4 teaspoon salt
  • 2 cups grated American cheese
  • 1/3 cup soft bread crumbs

Directions
  1. Cook rice until tender as directed on package then drain if necessary.
  2. Meanwhile melt 4 tablespoons of the butter in a double boiler.
  3. Add flour and seasonings then blend well.
  4. Pour in milk and stir until thick and smooth then cook 5 minutes longer.
  5. Add cheese and stir until melted then arrange rice and cheese in layers in casserole.
  6. Sprinkle some cheese on top then mix crumbs and 2 tablespoons butter and place on top.
  7. Bake at 375 for 20 minutes or until well browned.
