Chicken Pork Adobo

- 1/2 kilo chicken, cut into serving pieces shopping list
- 1/2 kilo liempo or pork belly, cubed shopping list
- 1/3 cup vinegar shopping list
- 3-4 Tbsp soy sauce shopping list
- 1 Tbsp cooking oil shopping list
- 5 (or more!) cloves garlic, crushed shopping list
- 1/2 tspn black peppercorns, coarsely ground shopping list
- 2-3 bay leaf, torn shopping list
How to make it
- In a large saucepan, combine all ingredients except cooking oil.
- Bring to a boil and simmer uncovered for 30minutes or until liquid evaporates (but not all) and the meat are fork-tender.
- In another pan, transfer pieces of garlic, fry in hot oil until brown.
- Add the meat to the garlic then fry until all sides of the meat are brown and the liquid thickens.
- Serve on top of steamed rice.
