Chicken Pork Adobo Recipe

Ingredients
  • 1/2 kilo chicken, cut into serving pieces
  • 1/2 kilo liempo or pork belly, cubed
  • 1/3 cup vinegar
  • 3-4 Tbsp soy sauce
  • 1 Tbsp cooking oil
  • 5 (or more!) cloves garlic, crushed
  • 1/2 tspn black peppercorns, coarsely ground
  • 2-3 bay leaf, torn

Directions
  1. In a large saucepan, combine all ingredients except cooking oil.
  2. Bring to a boil and simmer uncovered for 30minutes or until liquid evaporates (but not all) and the meat are fork-tender.
  3. In another pan, transfer pieces of garlic, fry in hot oil until brown.
  4. Add the meat to the garlic then fry until all sides of the meat are brown and the liquid thickens.
  5. Serve on top of steamed rice.
