Ingredients

3Tbs champagne or white wine vinegar

1/2tsp dijon mustard

1/2tspminced fresh garlic

1 extra-large egg yolk,room temperature

1/2c good olive oil

Directions

In small bowl,whisk together the vinegar,mustard,garlic,egg yolk,salt and pepper. Whilw whisking,slowly add the olive oil until the vinaigrette is emulsified.
