Omelette With Sauteed Asparagus

- 10 spears asparagus shopping list
- 1 large clove garlic (roughly 1 teaspoon), minced shopping list
- 2 tablespoons butter shopping list
- 5 eggs, whisked shopping list
- 1/4 cup shredded mozzarella cheese shopping list
- 1/4 cup freshly shredded parmesan cheese shopping list
- salt and pepper to taste shopping list
How to make it
- Melt butter over medium heat.
- Snap asparagus into 1 inch pieces; mince the garlic. Season with salt and pepper, then sauté until tender. Take from the pan and reserve for later.
- Whisk eggs together; season with salt and pepper. Pour into skillet and cook over medium heat until the edges of the egg mixture pick up easily from the bottom of the skillet.
- Add garlic and asparagus mixture along with the cheeses on one half of the egg mixture, fold over and serve.
