Omelette With Sauteed Asparagus Recipe
This omelette for two is great for a light lunch or as a side for a larger brunch affair. But the best part: it cooks up super-quick!

  • 10 spears asparagus
  • 1 large clove garlic (roughly 1 teaspoon), minced
  • 2 tablespoons butter
  • 5 eggs, whisked
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup freshly shredded parmesan cheese
  • Salt and pepper to taste

Directions
  1. Melt butter over medium heat.
  2. Snap asparagus into 1 inch pieces; mince the garlic. Season with salt and pepper, then sauté until tender. Take from the pan and reserve for later.
  3. Whisk eggs together; season with salt and pepper. Pour into skillet and cook over medium heat until the edges of the egg mixture pick up easily from the bottom of the skillet.
  4. Add garlic and asparagus mixture along with the cheeses on one half of the egg mixture, fold over and serve.
