How to make it

  • Heat cream., milk and sugar in heavy saucepan stirring occasionally until sugar is dissolved.
  • Place egg yolks in a bowl and whisk briefly.
  • Slowly pour in 1 cup of hot liquid continuing to whisk.
  • When mixture is blended slowly pour into liquid in saucepan.
  • Cook over heat stirring constantly for 8 minutes.
  • Strain into a clean bowl and cool thoroughly then stir in pecans.
  • Pour mixture into bowl of ice cream freezer and freeze according to manufacturer's instructions.
