Spicy Satsuma Steak

- 2 lbs boneless NY thin cut NY steak shopping list
- salt shopping list
- ¼ c. + 1 T. cornstarch shopping list
- ¼ c. Splenda, or 1/3 c. sugar shopping list
- ½ c. orange juice, high pulp preferred shopping list
- 2 T. tempura or low sodium soy sauce shopping list
- ½ c. seasoned rice vinegar shopping list
- 1-2 T. mirin (to taste) shopping list
- 2 Satsuma oranges, peeled and segmented, peels chopped and soaked in water for 5 minutes shopping list
- 8 broccoli flowerets, lightly cooked shopping list
- 1 whole water chestnuts, drained and halved shopping list
- 1 t. crushed red pepper shopping list
- 1 ½ T. crushed garlic shopping list
- 2 T. crushed ginger shopping list
- ½ c. peanut oil shopping list
How to make it
- Slice steak in to strips, removing big pieces of fat. Sprinkle with salt and place on paper towels for 30 minutes outside the refrigerator.
- Make a sauce with Splenda, or sugar, orange juice, vinegar and Mirin.
- In a wok, heat ¼ c. oil until hot. Sprinkle steak slices with cornstarch. Fry in three batches, about 3 minutes, stirring adding additional oil as needed. Remove to a platter. When done, remove oil except about 2 T. Add chopped orange peel, red pepper, garlic and ginger and cook, stirring about 1 minute.
- Add sauce and bring to a boil. Add steak slices, and any bits of fried cornstarch coating, broccoli, water chestnuts and orange segments. Cover wok and heat through. Add 1 T. cornstarch dissolved in water if needed to thicken.
- Serve with white rice. Serves 4.
