How to make it

  • Toss strawberries with confectioners' sugar, liqueur, juices and zest.
  • Allow to marinate refrigerated for 30 minutes.
  • Split vanilla bean open with knife and scrape out seeds.
  • Add seeds to whipping cream in ice cold bowl.
  • Whip to soft peaks just prior to serving.
  • Serve one scoop of ice cream in a martini glass then spoon some marinated strawberries over the ice cream and serve with a dollop of whipped cream on top.
