Blackberry Tacos

- 1 teaspoon grated orange peel shopping list
- 1/4 cup sugar shopping list
- 1/2 cup ricotta cheese shopping list
- 8 ounces cream cheese softened shopping list
- 6 flour tortillas shopping list
- 1/2 cup blackberry preserves shopping list
- 1 egg lightly beaten shopping list
- 2 tablespoons butter melted shopping list
- Blackberry Sauce: shopping list
- 3/4 cup blackberry preserves shopping list
- 1 cup fresh blackberries shopping list
How to make it
- Preheat oven to 500 then lightly grease jelly roll pan.
- With two wooden spoon thoroughly combine peel, sugar, ricotta, and cream cheese.
- Spoon 1/4 cup of mixture onto center of each tortilla then top with 1 tablespoon preserves.
- Fold one end of tortilla about 1-1/2" over filling.
- Fold left and right sides over folded end overlapping them then fold remaining end down.
- To seal brush edges with egg and pinch closed.
- Brush each pastry with butter then place seam side down on baking sheet.
- Bake 10 minutes until filling is hot and edges begin to brown
- Place preserves in microwavable bowl and heat on high for 1 minute then stir in blackberries.
- Serve drizzled over pastries.
