Ingredients
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup melted butter
  • 1 teaspoon cinnamon
  • 10 inch pie plate
  • 18 ozs cream cheese
  • 3 eggs
  • 1 and 1/4 cups sugar
  • 1/4 cup cocoa powder
  • 3 teaspoons rum
  • 21 taspoon vanilla
  • topping:
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 teaspoons rum or rum extract
  • 1/2 cup sour cream

Directions
  1. mix first 4 ingredients together press into pie plate and refrigerate
  2. mix together the 18 ozs cream cheese,eggs 1 and 1/4 cup sugar and cocoa,3teasp rum and vanilla
  3. together in mixer or with hand mixer
  4. turn into crust and bake at 350 for 40 to 45 minutes -test with knife into center ,if clean its done
  5. cool
  6. whip heavy cream,powdered sugar,rum in mixer till stiff
  7. fold in sour cream
  8. spread on top of pie and refrigerate overnight
  9. refrigerate bowl,beaters and cream before beating into topping mixture
