How to make it

  • Boil, steam or microwave beans and peas separately until just tender; rinse under cold water; drain well.
  • Toss cheese in flour, shake away excess flour, dip into egg, toss in breadcrumbs. Deep-fry cheese cubes in hot oil until lightly browned, drain cubes on absorbent paper.
  • Combine beans, peas, cheese, pepper, chicken, torn lettuce and shallots in a bowl, add dressing, toss gently.
  • DRESSING: Combine all ingredients in a jar, shake well.
