Chicken and Goats Cheese Salad

- 100g green beans, chopped shopping list
- 100g snow peas shopping list
- 100g goats cheese, cubed shopping list
- plain flour shopping list
- 1 egg, lightly beaten shopping list
- 1/4 cup packaged breadcrumbs shopping list
- oil for deep-frying shopping list
- 1 red pepper, sliced shopping list
- 3 cups (450g) chopped cooked chicken shopping list
- lettuce shopping list
- 4 green shallots, chopped shopping list
- DRESSING***** shopping list
- 2/3 cup olive oil shopping list
- 1 Tbsp balsamic vinegar shopping list
- 1 Tbsp white vinegar shopping list
- 2 Tsp seeded mustard shopping list
- 1 clove garlic, crushed shopping list
How to make it
- Boil, steam or microwave beans and peas separately until just tender; rinse under cold water; drain well.
- Toss cheese in flour, shake away excess flour, dip into egg, toss in breadcrumbs. Deep-fry cheese cubes in hot oil until lightly browned, drain cubes on absorbent paper.
- Combine beans, peas, cheese, pepper, chicken, torn lettuce and shallots in a bowl, add dressing, toss gently.
- DRESSING: Combine all ingredients in a jar, shake well.
