Parmesan Crusted Baked Tomatoes Recipe
PARMESAN CRUSTED BAKED TOMATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Patrick Estate in Canton, Texas in 1981.

Ingredients
  • 3 teaspoons olive oil divided
  • 4 slices tomato
  • 2 tablespoons bread crumbs
  • 2 tablespoons parmesan cheese grated
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Rub a sheet pan with 1 teaspoon olive oil.
  2. Place tomato slices on pan and drizzle with 1 teaspoon olive oil.
  3. Combine bread crumbs, parmesan cheese, onion powder, garlic powder, salt and pepper.
  4. Place a thick layer of mixture on top of each tomato and drizzle with remaining olive oil.
  5. Bake at 425 for 20 minutes until golden brown.
