Ingredients
  • 2lbs potatoes
  • 1 large spanish onion
  • 1lb carrots
  • 1 veg stock cube
  • 2-3 oz butter
  • salt & pepper

Directions
  1. peel & thin slice pots
  2. peel & slice onion
  3. peel & slice carrots, place into microwave dish, season, cover and zap in jukebox for 5 mins, strir around or shake zap for another 5 mins.
  4. mix in crumbled stock cube and fill into buttered oven proof dish
  5. dot top with butter
  6. cover with foil and bake @ 400f for 45-50 mins
  7. sliced bell peppers may be added on the top before baking, may be finished with cheese or is good with Chorizo sliced on top

Hello again old friend. I like pots of veggies and broth, especially in the winter. A big batch like this tastes better each time it's reheated.
