Hotpot Potatoes

- 2lbs potatoes shopping list
- 1 large spanish onion shopping list
- 1lb carrots shopping list
- 1 veg stock cube shopping list
- 2-3 oz butter shopping list
- salt & pepper shopping list
How to make it
- peel & thin slice pots
- peel & slice onion
- peel & slice carrots, place into microwave dish, season, cover and zap in jukebox for 5 mins, strir around or shake zap for another 5 mins.
- mix in crumbled stock cube and fill into buttered oven proof dish
- dot top with butter
- cover with foil and bake @ 400f for 45-50 mins
- sliced bell peppers may be added on the top before baking, may be finished with cheese or is good with Chorizo sliced on top

Hello again old friend. I like pots of veggies and broth, especially in the winter. A big batch like this tastes better each time it's reheated.
