BLUEBERRY ALMOND CREPES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Krieger Estate in Wylie, Texas in 1997.

Ingredients
  • 4 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 tablespoon brown sugar
  • 1/4 teaspoons almond extract
  • Filling:
  • 16 ounce container cottage cheese
  • 2 egg yolks
  • 3 tablespoons granulated sugar
  • 1 tablespoon orange peel
  • 1/2 cup chopped almonds
  • Blueberry sauce:
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/3 cup orange juice
  • 2 cups fresh blueberries
  • Topping:
  • Sour cream
  • 1/2 cup toasted sliced almonds

Directions
  1. To make crepes combine all ingredients in blender to form batter then whirl until smooth.
  2. Let batter rest 30 minutes in refrigerator then spray crepe pan with spray over medium heat.
  3. Add 4 tablespoons batter to pan tilting to make even layer then cook on one side only.
  4. When bottom begins to brown turn onto a sheet of waxed paper and repeat with remaining batter.
  5. Put wax paper between each crepe and stack.
  6. To make filling combine cheese, egg yolks, sugar and orange peel in blender until smooth.
  7. Add almonds and process until smooth then place 2 heaping tablespoons of filling on crepe.
  8. Roll and place on a baking sheet then place in 300 degree oven for 15 minutes.
  9. Combine all sauce ingredients and stir gently until well combined.
  10. Pour sauce over crepes and top with a dollop of sour cream and sprinkle with almonds.
  11. Serve while warm.
