Fresh Strawberry And White Chocolate Sundae

Kirsch : From the German 'kirsch' meaning cherry, this is a clear liqueur distilled from cherries and their almond-flavoured stones, often used in sponge cakes, for macerating and to flavour dishes containing fruit.
Ingredients
- 200g/7oz white chocolate, chopped shopping list
- 400ml/14fl oz double cream shopping list
- 450g/16oz strawberries, quartered shopping list
- 2 tbsp icing sugar shopping list
- 2 tbsp kirsch shopping list
- mint, to garnish shopping list
How to make it
- Put the chocolate into a heatproof bowl over a pan of simmering water and heat until almost melted.
- Remove from the heat and leave to melt completely.
- Stir until smooth.
- Pour in the double cream, whisking all the time.
- Whisk until thickened and cream holds its shape.
- Place strawberries, icing sugar and kirsch into a pan and heat for three minutes.
- Remove from the heat and allow to cool.
- Place a little of cooled strawberry mixture in the bottom of a serving glass.
- Add a layer of cream mixture.
- Repeat layering until glass is full.
- To finish, top with strawberries and mint garnish.
