How to make it

  • Saute onion and garlic in heated olive oil over medium heat (do not burn garlic)
  • Add mushrooms till onions tender
  • Add all other vegetables and saute for about 7 minutes, do not burn
  • Add crushed tomatoes, diced tomatoes, paste.
  • Add wine and Parmesan cheese
  • Add seasonings to taste
  • Lower heat to low and cook for atleast 2 hours.
  • Serve with pasta.
  • Note:
  • I add 1/2 stick pepperoni for a zesty tangy sauce
