Vegetable Spagetti Sauce

- 2 medium onion chopped shopping list
- 5 cloves garlic chopped shopping list
- 2 cans mushrooms drained shopping list
- 1 zucchini chopped shopping list
- 3 carrots chopped shopping list
- 2 celery stalks chopped shopping list
- 1 red pepper chopped shopping list
- 1 green pepper chopped shopping list
- 4 scallions sliced shopping list
- 2 (28 oz) cans crushed tomatoes shopping list
- 1 (14.5 oz) can diced tomatoes (Italian flavored) shopping list
- 1 can tomatoe paste shopping list
- 1/4 cup dry red wine shopping list
- Seasonings: shopping list
- italian seasoning, pepper, salt, garlic powder, crushed red pepper, shopping list
- basil, oregano, dried shallots, dried red peppers, dried tomatoes shopping list
- olive oil (1/4 cup or less) shopping list
- parmesan cheese (1/2 cup) shopping list
How to make it
- Saute onion and garlic in heated olive oil over medium heat (do not burn garlic)
- Add mushrooms till onions tender
- Add all other vegetables and saute for about 7 minutes, do not burn
- Add crushed tomatoes, diced tomatoes, paste.
- Add wine and Parmesan cheese
- Add seasonings to taste
- Lower heat to low and cook for atleast 2 hours.
- Serve with pasta.
- Note:
- I add 1/2 stick pepperoni for a zesty tangy sauce
