Vegetable Spagetti Sauce Recipe
Great alternative to spagetti sauce without the fuss and meat. Tastes better the next day

Ingredients
  • 2 medium onion chopped
  • 5 cloves garlic chopped
  • 2 cans mushrooms drained
  • 1 zucchini chopped
  • 3 carrots chopped
  • 2 celery stalks chopped
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 4 scallions sliced
  • 2 (28 oz) cans crushed tomatoes
  • 1 (14.5 oz) can diced tomatoes (Italian flavored)
  • 1 can tomatoe paste
  • 1/4 cup Dry Red wine
  • Seasonings:
  • Italian Seasoning, Pepper, Salt, Garlic Powder, crushed red pepper,
  • basil, oregano, dried shallots, dried red peppers, dried tomatoes
  • Olive Oil (1/4 cup or less)
  • Parmesan Cheese (1/2 cup)

Directions
  1. Saute onion and garlic in heated olive oil over medium heat (do not burn garlic)
  2. Add mushrooms till onions tender
  3. Add all other vegetables and saute for about 7 minutes, do not burn
  4. Add crushed tomatoes, diced tomatoes, paste.
  5. Add wine and Parmesan cheese
  6. Add seasonings to taste
  7. Lower heat to low and cook for atleast 2 hours.
  8. Serve with pasta.
  9. Note:
  10. I add 1/2 stick pepperoni for a zesty tangy sauce
