Veggie Stuffed Pork Tenderloin Recipe
This is a healthy, savory recipe that I created, that is simple, yet fancy-to-the-eye, and can even be prepared on a busy week night!

Ingredients
  • Olive oil
  • 1 1/2 Lb pork tenderloin
  • 1/4 red bell pepper, chopped
  • 1/4 green bell pepper, chopped
  • 1/3 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 scalloin, chopped (white and green parts)
  • Kosher salt
  • Pepper
  • Handful, crumbled feta cheese (I used the garlic & herb flavor)
  • Pinch of dried thyme
  • Pinch of dried oregano
  • Drizzle of worcestershire sauce

Directions
  1. Preheat oven to 425
  2. Saute peppers, onion, garlic & scallion in olive oil for 2-3 minutes.
  3. Add pinch of salt and pepper and saute for another 3 minutes. Remove from heat.
  4. Gently stir feta into veggie mixture.
  5. Season tenderloin with salt, pepper, herbs and a light drizzle of worcestershire sauce.
  6. Cut a pocket through the side of the pork tenderloin and stuff with veggie/cheese mixture.
  7. Bind with kitchen twine
  8. Bake at 425 for 5 minutes, then reduce to 375 and cook for 35 minutes.
  9. Once removed from oven, cover pork with foil and let sit for 10 minutes before cutting.
  10. ***Enjoy!
