LEMON DILL SALMON This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woods Estate in Canton, Texas in 1988.

Ingredients
  • 4 salmon steaks
  • 4 carrots sliced
  • 1 yellow squash sliced thinly
  • 1/4 cup lemon juice
  • 1/4 cup melted butter
  • 2 teaspoons dried dill weed
  • 1 teaspoon lemon pepper

Directions
  1. Preheat oven to 450 then spray 4 sheets foil with nonstick cooking spray.
  2. Place each steak in middle of each sheet of foil.
  3. Place slice of carrot around the salmon then top salmon with squash slices.
  4. Combine remaining ingredients then spoon over top of salmon and vegetables.
  5. Bring up sides of foil and double fold to form a packet leaving space for heat circulation.
  6. Cook 20 minutes then serve immediately.
