Ingredients

FOR THE PASTRY

240g - 8,40z cake flour

2ml salt - nice big pinch

125g butter - 4.4oz

100ml sour cream - 3 1/2 fluid ounces

FOR THE FILLING

30ml-6tsp prepared mustard

250g-1/2 lb peeled and cored and roughly chopped

1 onion chopped

salt and fresh ground pepper

1tbls fresh sage or 1tsp dried

8 beef and pork sausages cooked and sliced

1 egg beaten

Directions

Sift flour and salt

cut in butter till mix resembles fine breadcrumbs

add sour cream and mix to a soft dough

wrap in wax paper and refrigerate for an hour

roll pastry into a thin rectangle

spread mustard all over it leaving 25mm, 1/4 inch around the edges

arrange apple, onion and seasoning in a narrow strip down centre of pastry

arrange sliced sausages on top

brush edges of pastry with beaten egg

make diagonal cuts into the pastry either side of the filling

fold the top edge over the filling

then "plait" the strips of pastry over the filling tucking in the bottom edge

place Plait on a greased and floured baking sheet

brush with beaten egg

bake for 30-35min in a preheated oven at 200C, 400F or gas 6
