Biltong and Cheese Quiche - beef Jerky

- 150g cake flour - 5.2 oz shopping list
- big pinch salt shopping list
- 1 tsp mustard powder shopping list
- 120g butter - 4.2 oz shopping list
- 50ml iced water - 1.7 fl oz shopping list
- FILLING shopping list
- 2 leeks sliced shopping list
- 1 tbl spoon butter shopping list
- 1 tbls oil shopping list
- 2 tbls chopped fennel or parsley shopping list
- 120g grated biltong - beef jerky 4.2oz shopping list
- 4 beaten eggs shopping list
- 250ml cream - 8.8 fl oz shopping list
- 150ml sour cream - 5.2 fl oz shopping list
- 100g grated cheese - 3.5 oz shopping list
- 1 tsp mustard powder shopping list
- 1 tbls lemon juice shopping list
- 1 tsp lemon rind, grated shopping list
- freshly ground black pepper shopping list
How to make it
- sift flour and salt together
- cut in butter till it resembles fine breadcrumbs
- add iced water to form a soft dough
- place in a plastic bag and let rest in fridge for at least half an hour
- roll out on a floured board and then line a 230 mm quiche dish
- bake blind in a 200C, 400F gas 6 oven for 8-10 min
- gently fry leaks in butter and oil till soft
- spread over bottom of pastry shell
- mix rest of ingredients and pour into pasty shell
- bake for 35-45 min in a 160C, 300F gas 2 oven
