How to make it

  • sift flour and salt together
  • cut in butter till it resembles fine breadcrumbs
  • add iced water to form a soft dough
  • place in a plastic bag and let rest in fridge for at least half an hour
  • roll out on a floured board and then line a 230 mm quiche dish
  • bake blind in a 200C, 400F gas 6 oven for 8-10 min
  • gently fry leaks in butter and oil till soft
  • spread over bottom of pastry shell
  • mix rest of ingredients and pour into pasty shell
  • bake for 35-45 min in a 160C, 300F gas 2 oven
