Biltong And Cheese Quiche - Beef Jerky Recipe
this is a typical South African dish for Saturday brunch, light meal or for entertaining guests

Ingredients
  • 150g cake flour - 5.2 oz
  • big pinch salt
  • 1 tsp mustard powder
  • 120g butter - 4.2 oz
  • 50ml iced water - 1.7 fl oz
  • FILLING
  • 2 leeks sliced
  • 1 tbl spoon butter
  • 1 tbls oil
  • 2 tbls chopped fennel or parsley
  • 120g grated biltong - beef jerky 4.2oz
  • 4 beaten eggs
  • 250ml cream - 8.8 fl oz
  • 150ml sour cream - 5.2 fl oz
  • 100g grated cheese - 3.5 oz
  • 1 tsp mustard powder
  • 1 tbls lemon juice
  • 1 tsp lemon rind, grated
  • freshly ground black pepper

Directions
  1. sift flour and salt together
  2. cut in butter till it resembles fine breadcrumbs
  3. add iced water to form a soft dough
  4. place in a plastic bag and let rest in fridge for at least half an hour
  5. roll out on a floured board and then line a 230 mm quiche dish
  6. bake blind in a 200C, 400F gas 6 oven for 8-10 min
  7. gently fry leaks in butter and oil till soft
  8. spread over bottom of pastry shell
  9. mix rest of ingredients and pour into pasty shell
  10. bake for 35-45 min in a 160C, 300F gas 2 oven
