  • 1 Tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 300g button mushrooms, halved
  • 420g can condensed cream of pumpkin soup
  • 2 cups vegetable stock
  • Salt and pepper, to taste
  • 500g butternut pumpkin, peeled, cut into 2cm pieces
  • 425g tuna in spring water, drained
  • 1/2 cup chopped fresh basil
  • 250g penne pasta
  • 1 cup grated tasty cheese
  • Fresh basil leaves, to garnish
  • Mixed salad leaves, to serve

Directions
  1. Heat oil in a large saucepan. Add onion, garlic and mushrooms. Cook, stirring occasionally, until onion is soft. Add soup and stock. Bring to boil. Simmer for 5 minutes. Season with salt and pepper.
  2. Add pumpkin, tuna, basil and uncooked pasta. Stir to combine. Pour mixture into a large ovenproof dish (12-cup capacity). Cover tightly with foil.
  3. Cook in hot oven (200dC) for about 30 minutes, or until pasta is tender and cheese is golden brown. Remove and stand for 10 minutes before serving.
  4. Garnish pasta bake with basil. Serve with mixed salad leaves.
