Trahana - Sour Dough Pasta Greek Style Recipe
Trahana is a homemade sour noodle used in soups and stews. In this case, it is combined with some olive oil, chicken bouillon powder, tomato paste and water to make a nice meal.

Ingredients
  • 3 1/2 cups water
  • 3 tablespoons olive oil; divided
  • 1 teaspoon chicken bouillon powder
  • 1 tablespoon tomato paste
  • 8 oz sour trahana
  • Romano cheese, cubed; (or other hard cheese)

Directions
  1. In a pot, combine water, 1 tablespoon olive oil, bouillon powder and tomato paste.
  2. Bring to a boil.
  3. Add the trahana.
  4. Stir frequently on low heat, making sure it doesn't stick to bottom of pot.
  5. Continue cooking until the pasta is cooked and the water is evaporated, adding extra water if necessary if the water has boiled off before the pasta is tender.
  6. This will take about 15-20 minutes.
  7. Remove from heat.
  8. In a small frying pan, saute remaining olive oil with cheese cubes.
  9. Add cheese and oil to trahana and stir well.
  10. Sprinkle additional grated cheese on top and serve.
