Baked Apple Pancake Recipe
This baked apple pancake is great for those mornings that you just don't have to be anywhere. Put on the coffee get the paper and enjoy.

Ingredients
  • 2 tablespoons of butter at room temperature, plus 1 tsp. for cake pan
  • 1 medium apple
  • 2 tablespoons of sugar
  • 1/4 tsp. of cinnamon
  • 2 large eggs
  • 1/2 cup of milk (any percent will do)
  • 1/2 cup of all purpose flour

Directions
  1. Preheat oven to 400 degrees
  2. spread one traspoon butter in a 9 inch round cake pan on bottom and sides
  3. Peel and slice apples
  4. add sugar and cinnamon to apples in a mixing bowl
  5. evenly coat the apples and spread in the bottom of cake pan
  6. break the eggs in the mixing bowl with remnants of the sugar cinnamon mixture
  7. use electric mixer to beat eggs and add milk and beat with mixer
  8. with the mixer on low slowly add the flou one tablespoon at a time
  9. pour the batter over the apples
  10. cut remaining butter abd sprinkle over batter
  11. bake for 25 min. or until the pancake is very puffy and has pulled away slightly from the sides of the pan.
