MINT FUDGE BROWNIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hellmann Estate in Lewisville, Texas in 1982.

Ingredients
  • 3 large eggs
  • 1-1/2 cups mint chocolate chips
  • 1-1/4 cups unbleached flour
  • 1 cup chopped pecans
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 3 tablespoons water
  • 1-1/2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Directions
  1. Preheat oven to 325.
  2. In bowl combine flour, baking soda and salt then set aside.
  3. In saucepan combine sugar, butter and water then bring just to boil and remove from heat.
  4. Add mint chocolate chips and vanilla extract then stir until all chips have melted.
  5. Transfer to a large bowl then add eggs one at a time beating well after each addition.
  6. Gradually blend in flour mixture then stir in nuts and spread in rectangular baking dish.
  7. Bake 30 minutes then cool on wire rack and cut into squares.
