Heirloom Tomato Salad Recipe
HEIRLOOM TOMATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.

Ingredients
  • 2 large heirloom tomatoes sliced 1/4" thick
  • 1/4 pound buffalo mozzarella sliced 1/4" thick
  • 2 tablespoons fresh basil roughly torn into pieces
  • 1 shallot finely chopped
  • 1 teaspoon Dijon mustard
  • 1/3 cup sherry vinegar
  • 3/4 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Combine shallot, mustard and vinegar in small bowl and whisk to combine.
  2. Slowly add the extra virgin olive oil at a trickle while whisking then add salt and pepper.
  3. Arrange tomato and mozzarella slices on a plate then drizzle vinaigrette over top.
  4. Sprinkle basil over top and serve immediately.
