Heirloom Tomato Salad

- 2 large heirloom tomatoes sliced 1/4" thick shopping list
- 1/4 pound buffalo mozzarella sliced 1/4" thick shopping list
- 2 tablespoons fresh basil roughly torn into pieces shopping list
- 1 shallot finely chopped shopping list
- 1 teaspoon Dijon mustard shopping list
- 1/3 cup sherry vinegar shopping list
- 3/4 cup extra virgin olive oil shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
How to make it
- Combine shallot, mustard and vinegar in small bowl and whisk to combine.
- Slowly add the extra virgin olive oil at a trickle while whisking then add salt and pepper.
- Arrange tomato and mozzarella slices on a plate then drizzle vinaigrette over top.
- Sprinkle basil over top and serve immediately.
