Golden Breakfast Potato Muffins Recipe
GOLDEN BREAKFAST POTATO MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 1/2 pound butter potatoes peeled and sliced into rounds
  • 6 small eggs
  • 3 tablespoons white wine
  • 3 tablespoons milk
  • 2 tablespoon butter
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 2 slices crisp bacon crumbled

Directions
  1. Preheat oven to 400 then grease muffin pan with vegetable spray.
  2. In a nonstick pan melt 1 tablespoon butter and sauté potatoes 3 minutes or until pliable.
  3. Layer each muffin cup with 3 potato slices and then top each with an egg.
  4. In a nonstick pan over medium low heat melt 1 tablespoon butter and stir in flour.
  5. Add wine stirring constantly then add milk.
  6. Remove from heat and add cheese until melted then stir in salt and pepper.
  7. Spoon mixture over eggs and bake 10 minutes then remove from oven and cool 5 minutes.
  8. Carefully remove muffins and serve immediately.
