Double-peanut Peanut Butter Cookies

- Shortening; for greasing baking sheets shopping list
- 3/4 cup salted dry-roasted peanuts shopping list
- 1 1/3 cups all-purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- big pinch of salt shopping list
- 1/2 cup unsalted butter; softened shopping list
- 1/2 cup crunchy peanut butter shopping list
- 1/2 cup granulated sugar shopping list
- 1/2 cup firmly packed dark brown sugar shopping list
- 1 egg shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
- Adjust 2 oven racks to be in the center of your oven.
- Turn the oven on to 375F.
- Lightly grease the baking sheets with the shortening.
- Put the peanuts on the cutting board.
- With the sharp knife, chop coarsely.
- Set the peanuts aside.
- Put the flour, baking powder, baking soda, and salt in a medium mixing bowl.
- Stir with the wooden spoon to mix the ingredients.
- Put the butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla in a large mixing bowl.
- With the electric mixer set on medium-high speed, beat until the mixture is smooth and creamy.
- With the electric mixer set on low speed, add the flour mixture and beat just until blended.
- Stir in the peanuts.
- Roll rounded tablespoonfuls of the dough between your palms into balls.
- Put the balls on the greased baking sheets, spacing them 3 inches apart.
- Flatten each ball by pressing on the top with the fork. (If the dough sticks to the fork, dip the fork into granulated sugar before pressing.)
- Each cooking should be about 1/.2 inch thick.
- Place the baking sheets in the preheated 375F oven.
- Bake until the cookies are lightly browned, about 12 minutes.
