This makes 3 dozen, not 2 dozen as the book states. And they were very delicious. VIsually, they were prettier than the ones in the picture as I didn't flatten them out too much, just a little bit with the fork. I recommend this recipe!

Ingredients
  • Shortening; for greasing baking sheets
  • 3/4 cup salted dry-roasted peanuts
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • big pinch of salt
  • 1/2 cup unsalted butter; softened
  • 1/2 cup crunchy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Directions
  1. Adjust 2 oven racks to be in the center of your oven.
  2. Turn the oven on to 375F.
  3. Lightly grease the baking sheets with the shortening.
  4. Put the peanuts on the cutting board.
  5. With the sharp knife, chop coarsely.
  6. Set the peanuts aside.
  7. Put the flour, baking powder, baking soda, and salt in a medium mixing bowl.
  8. Stir with the wooden spoon to mix the ingredients.
  9. Put the butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla in a large mixing bowl.
  10. With the electric mixer set on medium-high speed, beat until the mixture is smooth and creamy.
  11. With the electric mixer set on low speed, add the flour mixture and beat just until blended.
  12. Stir in the peanuts.
  13. Roll rounded tablespoonfuls of the dough between your palms into balls.
  14. Put the balls on the greased baking sheets, spacing them 3 inches apart.
  15. Flatten each ball by pressing on the top with the fork. (If the dough sticks to the fork, dip the fork into granulated sugar before pressing.)
  16. Each cooking should be about 1/.2 inch thick.
  17. Place the baking sheets in the preheated 375F oven.
  18. Bake until the cookies are lightly browned, about 12 minutes.
