Portabella Stuffed Entree

- 2 large portabella mushroom caps washed shopping list
- 4 oz crab meat shopping list
- 1Tablespoon olive oil shopping list
- salt and peper shopping list
- 1 cup cooked buckwheat pilaf shopping list
- 1 1/2 cups mashed butternut squash and sweet potato shopping list
- 4 oz low fat sour cream shopping list
- 2 oz feta cheese shopping list
- chili powder (optional) shopping list
How to make it
- Pre heat oven to 375 degrees
- Place mushroom caps stem side up in roasting pan
- drizzle with olive oil and season with salt and pepper
- place crab meat in cap, top with buckwheat pilaf, top with mashed squash/sweet potato spreading to the edge of mushroom cap
- Then frost with sour cream and bake for 40 minutes. For the last 5 minutes crumb feta cheese, sprinkle with chili powder on top return to oven. Serve and enjoy.
