Portabella Stuffed Entree Recipe
This recipe just sort of fell together from a bunch of leftover but it sure tasted good and was high on the comfort scale

Ingredients
  • 2 large Portabella mushroom caps washed
  • 4 oz crab meat
  • 1Tablespoon olive oil
  • salt and peper
  • 1 cup cooked buckwheat pilaf
  • 1 1/2 cups mashed butternut squash and sweet potato
  • 4 oz low fat sour cream
  • 2 oz feta cheese
  • chili powder (optional)

Directions
  1. Pre heat oven to 375 degrees
  2. Place mushroom caps stem side up in roasting pan
  3. drizzle with olive oil and season with salt and pepper
  4. place crab meat in cap, top with buckwheat pilaf, top with mashed squash/sweet potato spreading to the edge of mushroom cap
  5. Then frost with sour cream and bake for 40 minutes. For the last 5 minutes crumb feta cheese, sprinkle with chili powder on top return to oven. Serve and enjoy.
