How to make it

  • Saute minced garlic in butter and 2 tablespoons olive oil for 3 minutes
  • Add rice and cook for another three minutes
  • Add chicken stock, one cup at a time, cooking untiil liquid is absorbed, stirring often
  • When all three cups have been cooked into the rice, add about one cup of fresh parmesan cheese, mix well into rice and remove from pan
  • Season fish with salt and pepper and cook in 1 tablespoon olive oil in the same pan
  • Cook about 4 minutes on each side until golden brown
  • Cover with several tablespoons (to your taste) parmesan cheese
  • Serve with fresh steamed veggies
