Parmesan Risotto and Tilapia

- 2 cloves garlic, minced shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons, plus one tablespoon extra virgin olive oil shopping list
- 1 cup arborio rice shopping list
- 3 cups chicken stock shopping list
- 4 Tilapia fish shopping list
- salt shopping list
- pepper shopping list
- 1 cup plus several tablespoons parmesan cheese shopping list
How to make it
- Saute minced garlic in butter and 2 tablespoons olive oil for 3 minutes
- Add rice and cook for another three minutes
- Add chicken stock, one cup at a time, cooking untiil liquid is absorbed, stirring often
- When all three cups have been cooked into the rice, add about one cup of fresh parmesan cheese, mix well into rice and remove from pan
- Season fish with salt and pepper and cook in 1 tablespoon olive oil in the same pan
- Cook about 4 minutes on each side until golden brown
- Cover with several tablespoons (to your taste) parmesan cheese
- Serve with fresh steamed veggies
