SNAPPER BURGER WITH MANGO KETCHUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monde Estate in Haley Texas in 1992.

Ingredients
  • 1 pound fresh red snapper fillets
  • 3 large egg whites
  • 1-1/2 teaspoons kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon Thai fish sauce
  • 2 tablespoons chopped scallions
  • 1 teaspoon chopped fresh dill
  • 1/4 cup fresh bread crumbs
  • 2 tablespoons olive oil
  • 1 loaf French bread quartered
  • 1 cup spinach cleaned and dried
  • Mango ketchup:
  • 4 medium mangos
  • 2 ounces vinegar
  • 1 tablespoon ginger
  • 1 dash cinnamon
  • 1 teaspoon salt
  • 1/2 cup raw sugar
  • 1/2 cup white wine
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cayenne pepper
  • 1 whole clove

Directions
  1. Chop red snapper by hand then place in large stainless steel bowl.
  2. Add egg whites, salt, cayenne, fish sauce, scallions and dill then mix well.
  3. Add enough bread crumbs to bind all together then form into 4 burgers.
  4. Chill in refrigerator for 30 minutes before grilling.
  5. Heat a grill or broiler until very hot.
  6. Drizzle a little olive oil over the burgers just before grilling.
  7. Grill over high heat for 2 minutes on each side being careful not to overcook.
  8. Serve burgers immediately on the bread with spinach leaves and a tablespoon of mango ketchup.
  9. To make mango ketchup peel and clean mango then remove pulp.
  10. Put pulp in food processor fitted with stainless steel blade.
  11. Add remaining ingredients and pulse together.
  12. Cook mixture over slow heat for 1 hour in heavy saucepan then remove from heat and cool.
  13. Strain through five sieve
