Garlic Cilantro Grilled Chicken

- 4 pound chicken shopping list
- 6 large cloves garlic minced shopping list
- 1/2 cup chopped fresh cilantro shopping list
- 3/4 cup olive oil shopping list
- 6 jalapeno chilies seeds and stems removed then minced shopping list
- 1/2 teaspoon kosher salt shopping list
- 1/2 teaspoon cracked black pepper shopping list
- 1 cup barbecue sauce shopping list
- 1/4 cup chopped cilantro for garnish shopping list
How to make it
- Combine garlic, cilantro, olive oil, jalapenos, salt and black pepper.
- Quarter chicken removing any excess fat, backbone, neck and giblets.
- Place chicken in large plastic bag and hall of the marinade then seal.
- Reserve remaining marinade then marinate chicken refrigerated for 6 minutes.
- Remove chicken from marinade and pat dry then discard used marinade.
- In small saucepan over medium low heat cook reserved marinade 5 minutes.
- Add barbecue sauce and simmer over medium heat 15 minutes stirring often.
- Preheat grill for medium high indirect cooking.
- Sear chicken quarters over hot side of grill then move pieces to cooler area of grill.
- Cook chicken quarters bone side down covered and rotating occasionally one hour.
- After cooking for one hour lightly brush chicken with reduced garlic cilantro sauce.
- Continue cooking for 30 minutes then remove from grill and tent with foil.
- Keep warm in a low oven up to 20 minutes then serve.
