Garlic Cilantro Grilled Chicken Recipe
GARLIC CILANTRO GRILLED CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Turner Estate in Dallas, Texas in 1997.

Ingredients
  • 4 pound chicken
  • 6 large cloves garlic minced
  • 1/2 cup chopped fresh cilantro
  • 3/4 cup olive oil
  • 6 jalapeno chilies seeds and stems removed then minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1 cup barbecue sauce
  • 1/4 cup chopped cilantro for garnish

Directions
  1. Combine garlic, cilantro, olive oil, jalapenos, salt and black pepper.
  2. Quarter chicken removing any excess fat, backbone, neck and giblets.
  3. Place chicken in large plastic bag and hall of the marinade then seal.
  4. Reserve remaining marinade then marinate chicken refrigerated for 6 minutes.
  5. Remove chicken from marinade and pat dry then discard used marinade.
  6. In small saucepan over medium low heat cook reserved marinade 5 minutes.
  7. Add barbecue sauce and simmer over medium heat 15 minutes stirring often.
  8. Preheat grill for medium high indirect cooking.
  9. Sear chicken quarters over hot side of grill then move pieces to cooler area of grill.
  10. Cook chicken quarters bone side down covered and rotating occasionally one hour.
  11. After cooking for one hour lightly brush chicken with reduced garlic cilantro sauce.
  12. Continue cooking for 30 minutes then remove from grill and tent with foil.
  13. Keep warm in a low oven up to 20 minutes then serve.
