How to make it

  • Combine garlic, cilantro, olive oil, jalapenos, salt and black pepper.
  • Quarter chicken removing any excess fat, backbone, neck and giblets.
  • Place chicken in large plastic bag and hall of the marinade then seal.
  • Reserve remaining marinade then marinate chicken refrigerated for 6 minutes.
  • Remove chicken from marinade and pat dry then discard used marinade.
  • In small saucepan over medium low heat cook reserved marinade 5 minutes.
  • Add barbecue sauce and simmer over medium heat 15 minutes stirring often.
  • Preheat grill for medium high indirect cooking.
  • Sear chicken quarters over hot side of grill then move pieces to cooler area of grill.
  • Cook chicken quarters bone side down covered and rotating occasionally one hour.
  • After cooking for one hour lightly brush chicken with reduced garlic cilantro sauce.
  • Continue cooking for 30 minutes then remove from grill and tent with foil.
  • Keep warm in a low oven up to 20 minutes then serve.
