Fresh Asparagus Casserole Recipe
FRESH ASPARAGUS CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.

Ingredients
  • 1-1/2 cups water
  • 1-1/2 cups chicken stock
  • 1 teaspoon salt
  • 1 pound fresh asparagus
  • 2 tablespoons butter
  • 1 small white onion
  • 3 cloves minced garlic
  • 1 cup uncooked long grain rice
  • 1/2 cup diced red bell pepper
  • 1/2 cup grated parmesan cheese

Directions
  1. Mix all ingredients then pour into casserole dish and cover.
  2. Bake at 400 for 20 minutes then stir bake 20 minutes longer.

2 months and its time togo ditching asparagus. Will be trying this then, might substitute wild rice.
