Macadamia Halibut Recipe
MACADAMIA HALIBUT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woods Estate in Canton, Texas in 1988.

Ingredients
  • 2 halibut fillets
  • 3 eggs beaten
  • 2 ounces bread crumbs
  • 4 ounces flour
  • 2 ounces macadamia nuts crushed
  • 2 ounces dark rum
  • 2 ounces shrimp stock
  • 2 ounces orange juice
  • 1-1/2 tablespoons honey
  • 1 ounce soft butter
  • 2 tablespoons raisins
  • 1 tablespoon chopped fresh chives

Directions
  1. Mix bread crumbs and nuts together.
  2. Dredge fish first in flour then in beaten eggs then in bread crumb mixture.
  3. Sauté in heated sauté pan in melted butter for 2 minutes per side.
  4. Place in shallow baking dish and bake at 350 for 6 minutes.
  5. Deglaze small sauté pan with rum then add stock, orange juice and honey.
  6. Reduce by 3/4 then remove from heat then add raisins and whisk in butter.
  7. Ladle sauce over fish and garnish with chives.
