Macadamia Halibut

- 2 halibut fillets shopping list
- 3 eggs beaten shopping list
- 2 ounces bread crumbs shopping list
- 4 ounces flour shopping list
- 2 ounces macadamia nuts crushed shopping list
- 2 ounces dark rum shopping list
- 2 ounces shrimp stock shopping list
- 2 ounces orange juice shopping list
- 1-1/2 tablespoons honey shopping list
- 1 ounce soft butter shopping list
- 2 tablespoons raisins shopping list
- 1 tablespoon chopped fresh chives shopping list
How to make it
- Mix bread crumbs and nuts together.
- Dredge fish first in flour then in beaten eggs then in bread crumb mixture.
- Sauté in heated sauté pan in melted butter for 2 minutes per side.
- Place in shallow baking dish and bake at 350 for 6 minutes.
- Deglaze small sauté pan with rum then add stock, orange juice and honey.
- Reduce by 3/4 then remove from heat then add raisins and whisk in butter.
- Ladle sauce over fish and garnish with chives.
