How to make it

  • Mix bread crumbs and nuts together.
  • Dredge fish first in flour then in beaten eggs then in bread crumb mixture.
  • Sauté in heated sauté pan in melted butter for 2 minutes per side.
  • Place in shallow baking dish and bake at 350 for 6 minutes.
  • Deglaze small sauté pan with rum then add stock, orange juice and honey.
  • Reduce by 3/4 then remove from heat then add raisins and whisk in butter.
  • Ladle sauce over fish and garnish with chives.
