Walnut Stuffed Baby Red Potatoes Recipe
WALNUT STUFFED BABY RED POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brimley Estate in Garland, Texas in 1999.

Ingredients
  • 24 baby red potatoes
  • 3/4 cup sour cream
  • 24 walnut halves toasted
  • 24 fresh dill sprigs

Directions
  1. Cook potatoes in boiling water for 12 minutes then drain and cool.
  2. Slice off bottom end of each potato so it sits upright and slice off 1/3 of top.
  3. Scoop out potato and fill with a dollop of sour cream then top with walnut hugs.
  4. Tuck in a sprig of dill then serve immediately.
