CHICKEN WITH LINGUINI FLORENTINE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Carr Estate in Bonham, Texas in 1994.

Ingredients
  • 8 chicken thighs
  • 4 tablespoons butter melted
  • 4 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 2 cloves garlic minced
  • 1 large yellow onion cut into rings
  • 16 ounce package linguini
  • 20 ounces frozen chopped spinach thawed and drained well
  • 1 cup grated parmesan cheese

Directions
  1. In baking dish place butter and olive then sprinkle with salt, red pepper and garlic.
  2. Add onion rings and arrange chicken on top skin side up.
  3. Place in preheated 400 oven and bake uncovered 40 minutes.
  4. Prepare pasta while chicken is cooking then remove chicken from pan and keep warm.
  5. Add spinach to onion mixture then toss and return to oven and heat 5 minutes.
  6. Add drained pasta to open spinach mixture in baking pan and toss.
  7. Sprinkle with parmesan cheese and toss again.
  8. Pile pasta in middle of platter and place chicken around sides then serve immediately.
