TURKEY BREAST WITH SPINACH RICE DRESSING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mahan Estate in Grand Saline, Texas in 1987.

Ingredients
  • 5 pound turkey breast boned and skinned
  • 1 cup minced onion
  • 1 cup sliced mushrooms
  • 3 cups cooked brown rice
  • 2 tablespoons fine dry breadcrumbs
  • 2 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 tablespoon oleo
  • 1/4 teaspoon dried summer savory
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 egg whites slightly beaten
  • 1 package frozen spinach drained and thawed

Directions
  1. Trim fat from breast and remove tendons.
  2. Place outer side of turkey breast on plastic wrap bone side up.
  3. Starting from center slice horizontally through thickest part of each breast.
  4. Flip cut pieces over to enlarge breast then place plastic wrap over breast and flatten.
  5. Place loose edges of breast over thinner portions then set aside.
  6. Coat large nonstick skillet with cooking spray then place over medium heat until hot.
  7. Add onions and mushrooms and sauté until tender.
  8. Remove from heat then add rice and next 10 ingredients and stir well.
  9. Spread spinach mixture in center of turkey within 2” of sides.
  10. Roll up jellyroll fashion starting with short side and secure at 2” intervals using string.
  11. Place seam side down in shallow roasting pan coated with cooking spray.
  12. Brush turkey breast lightly with oleo then bake uncovered at 325 for 2 hours.
  13. Baste occasionally with remaining oleo then place turkey breast on serving platter.
  14. Let stand 10 minutes before slicing then remove string and cut turkey roll into slices.
