Tomatoes Spanish Style Recipe
TOMATOES SPANISH STYLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mason Estate in Fate, Texas in 1991.

Ingredients
  • 1 quart tomatoes
  • 3 bell peppers
  • 4 white onions
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups stale bread crumbs
  • 6 tablespoons butter

Directions
  1. Peel and slice tomatoes then remove seeds then cut bell peppers in small pieces.
  2. Boil onions until tender then add tomatoes and peppers and simmer 1 hour.
  3. Season with salt and pepper then cool and keep on ice for several hours.
  4. Fill baking dish with alternate layers of tomatoes and breadcrumbs moistened with butter.
  5. End with layer of breadcrumbs then bake at 200 for 1 hour.
