Sweet and Pungent Chops

- 4 loin pork chops, 1-inch thick shopping list
- 2 tablespoons of cooking oil shopping list
- 1/3 cup pitted prunes shopping list
- 1/3 cup golden raisins shopping list
- 1/3 cup sliced apricots (you can use dried if you want) shopping list
- 1/2 cup marsala wine shopping list
- 3 tablespoons cider vinegar shopping list
- 3 tablespoons butter shopping list
- 3 tablespoons brown sugar shopping list
- 1 1/2 tablespoons of soy sauce shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 350F.
- Brown the pork chops in the oil.
- Meanwhile, combine the prunes, raisins, apricots and wine; let stand.
- In a sauce pan, blend the vinegar butter, brown sugar ans soy sauce. Bring to a boil and stir until the sugar has dissolved.
- Place the browned pork chops in a single layer, in a large baking dish. Season with salt and pepper.
- Pour the vinegar mixture over the chops and cover the pan with a lid or foil.
- Bake for 20 minutes.
- Uncover, spoon the fruit mixture over the top of the chops.
- Bake uncovered, basting occassionally, for an additional 20 minutes, or until tender.
- Serve with Saffron rice and brussel sprouts.
