How to make it

  • Preheat oven to 350F.
  • Brown the pork chops in the oil.
  • Meanwhile, combine the prunes, raisins, apricots and wine; let stand.
  • In a sauce pan, blend the vinegar butter, brown sugar ans soy sauce. Bring to a boil and stir until the sugar has dissolved.
  • Place the browned pork chops in a single layer, in a large baking dish. Season with salt and pepper.
  • Pour the vinegar mixture over the chops and cover the pan with a lid or foil.
  • Bake for 20 minutes.
  • Uncover, spoon the fruit mixture over the top of the chops.
  • Bake uncovered, basting occassionally, for an additional 20 minutes, or until tender.
  • Serve with Saffron rice and brussel sprouts.
