Makloubeh Upside-down Recipe
This is a traditional Palestinian dish. Although she is Jordanian, my mother taught me how to do it. It is very famous and people love in the middle east. Very good with fresh Greek salad and/or yougurt

Ingredients
  • 200 grams Beef (best sheep meat, better with its bones, just cut into somewhat square pieces)
  • 1 Onion
  • some Black Pepper Seeds (or 1/2 small spoon powder)
  • some Cinnamon sticks (or 1 small spoon powder)
  • some Fennel Seeds (or 1/4 small spoon powder)
  • a pinch of mixed spices
  • 1 cup Rice (American/ Basmati)
  • 1 big Potato
  • 1 big Eggplant
  • 1/2 medium Cauliflower
  • some Salt
  • some Oil

Directions
  1. You need to boil the meat in water in a good sized pot, once it came to boiling you can add the chopped onion, black pepper, cinnamon, fennel, and mixed spices. Leave on mid-heat for 1.5 hrs
  2. During that time, peal the eggplant and potato and cut in slices. Cut the cauliflower into pieces as well. Salt th vegetables a little then fry the eggplant and cauliflower ONLY, but not fully (half a fry). Leave the potato as is.
  3. Wash the rice by covering it with water and then liquidate from water.
  4. Do that three times.
  5. After the meat is finished, Get a clean pot and put the ingredients in this order: Potatoes--> Meat --> Eggplant --> Cauliflower --> Rice --> spread a small spoon of salt
  6. Then add water to cover all this and add about a centimeter of water above. Put on fire, when you see that the extra water has evaporated, lower the heat until minimum, and leave for 15 minutes covered.
  7. Flip all this in big round dish, and people will think it's a rice cake with meat :) Bon Appetit!
