How to make it

  • Butter or spray an 8" round cake pan. Combine dry ingredients, raisins and orange peel. Mix well. Add buttermilk and stir until soft dough that is firm enough to hold its shape.
  • Knead on a lightly floured surface for 3 minutes, until smooth and velvety. Form into a round loaf and place in pan. Score a cross on the top with a sharp knife and sprinkle liberally with sugar. Bake at 375 for 35 minutes or until browned and hollow-sounding when tapped. Do not overbake or it becomes dry!
